Cupcake variation on a cherpumple

No one was thrilled with the Cherpumple idea for our New Year’s get together so I decided to make a pie inside of a cupcake.

I made mini apple pies with a homemade apple mixture and store bought pie crust. I baked those in the mini tins, then I made a french vanilla box cake (with vanilla pudding and sour cream), then poured it over the pies in regular sized cupcake tin (inside cupcake papers).

I baked them and then made a cream cheese frosting to decorate on top. They are interesting. I am surprised they turned out.
